Twisted Calabrian pasta with nduja melted into tomato sauce.

Method

  1. Cook onion gently in olive oil.
  2. Add nduja and stir until it melts.
  3. Add tomatoes and simmer 15 minutes.
  4. Cook pasta until al dente.
  5. Toss with sauce and pasta water.
  6. Finish with ricotta salata if desired.
Cook's note: Start with less nduja than you think; brands vary in heat and salt.
